What Are You Doing New Year’s Eve? Making These Fantabulous Cocktails at Home

We’ve received word of several brave and decidedly forward-thinking attempts to re-invent New Year’s Eve celebrations in the middle of a once again surging pandemic. For instance, at Duane Park, the glamorous and popular dinner theater spot in New York’s Tribeca, they are offering up a 5-course dinner in heated outdoor seating, with aerial and burlesque performers (a chilly strip-tease, no doubt), jugglers and live music…ending at 9pm, so one can be safely back in cozy quarters to ring in a desperately welcome 2021.

Even more daringly, the founders of Eschaton have moved clubbing successfully into the virtual realm – allowing one to purchase a ticket, and wander from digital room to digital room, in the immersive fashion of Sleep No More. There are enigmatic yet riveting artistic performances that are provocative, and yet also thought provoking. This would be an especially attractive option for the evening of the 31st, as we’re guessing most revelers (we use that word with a wink) will be choosing the familiarity of their 10-months-old home bubble over venturing out. And we couldn’t think of anything better than skipping the champagne this year, and instead ringing in 2021 with a Good Sling Wenceslas cocktail, and the people we love the most.

Five Cocktails for Your 2020 New Year’s Eve Celebration

Winter Mimosa (pictured above)


1 part Absolut Elyx

1 part Lillet Rouge

3 parts Blood Orange Juice

1/2 part Maple Syrup

2 parts Champagne

Method: Add all ingredients to an Absolut Elyx Boutique Copper Cocktail Balloon over cubed ice and stir gently to combine. Top with more ice and garnish with red currants, bay leaf & rosemary sprig.

1.5oz Chamomile Infused 12 Year Old Knappogue Castle Irish Whiskey*

1L Knappogue Castle Irish Whiskey

10g loose Chamomile

.5oz Lemon Juice

.25oz Cucumber Juice

.75oz Rich Honey Syrup (2 parts honey, 1 part water)

.5oz Celtic Honey Syrup

2oz Champagne (after shake)

Method: Add all ingredients (except Champagne) to a mixing tin, add ice, shake, add Champagne and stain into a flute. To make the Chamomile Whiskey*, pour the whiskey into a clean container with the Chamomile flowers and let sit at room temperature for 30 minutes, stirring occasionally. Strain, bottle, label and store at room temperature.

Winter Spritz


1 oz Mr Black Cold Brew Coffee Liqueur

1 oz Campari

1 oz Soda

4 oz Prosecco

Method: Add all ingredients to a stemmed wine glass with ice, garnish with a grapefruit wheel and fresh rosemary sprig

Southern Sky


1 fl oz Salcombe Gin ‘Rosé Sainte Marie’

.5 fl oz Rosé Vermouth

.5 fl oz Thyme infused Chambord*

Champagne to top up

Method: Chill a Champagne saucer with ice and place to one side. Place the ‘Rose Sainte Marie’, vermouth and thyme-infused Chambord into a mixing jug, fill with ice, and stir with a bar spoon for 20 seconds. Remove the ice from the champagne saucer, and use a julep strainer to strain the mixture into the glass. Top with your favourite Champagne. *To make the thyme-infused Chambord, add 3 sprigs of thyme to half a bottle of Chambord and leave in the fridge for 4 days, shaking daily. Strain through a fine mesh sieve to remove the thyme.

About: A celebration of sophistication, Southern Sky is a delicate balance of the floral and red berry sweetness of Salcombe Gin Rosé Sainte Marie, with the cherry citrus of Rosé Vermouth and sharp raspberry of Chambord, infused with an earthy thyme backbone. Its glorious peach color is reminiscent of a low winter sunset over the Mediterranean sea.

Good Sling Wenceslas


3 parts Absolut Elyx

1 part Apricot Liqueur

1 part Aperol
1 part Lemon Juice

2 tsp Cranberry Jelly

4 parts Champagne

Method: Add all ingredients except champagne to an Absolut Elyx Copper Shaker with cubed ice and shake. Strain into an Absolut Elyx Boutique Copper Cocktail Balloon over cubed ice, then add champagne and stir gently to combine. Top with more ice, then garnish with candy canes.
