The Viceroy Los Cabos is one of those sorts of lavish resorts that right now just scream, “This is where you need to be after two years of isolation and fear.” To be sure, it’s hard to imagine a more urgent time to treat oneself to pure unabashed extravagance; and with its chicly minimalist sea-view suites, 11,000 square foot spa, and cool Cielomar rooftop bar, the VLC certainly ticks all the right boxes.
And in an impressive show of confidence in these uncertain times, they’ve just gone and opened a “statement” restaurant on the property, as if one actually needed just that extra bit of temptation to book a weekend here. The gorgeous Dalia is spread across an expansive, impossibly stylish open-air terrace, with breathtaking views of the Sea of Cortés in almost every direction.

It’s most charmingly named for the national flower of Mexico – and the atmosphere is correspondingly verdant, with lush greenery, citrus trees and local flora, all set strikingly against the stark white simplicity of the resort’s dramatic architecture.
Head Chef Carlos Terán comes with an impressive CV, having done time in the exalted kitchen at Amsterdam’s revolutionary Cocina de Autor, and more locally won acclaim at Milos at the Four Seasons Hotel in La Rivera. But here he is focused on more approachable but certainly creative Mediterranean cuisine for a less formal, more leisurely dining experience – so lamb kofte, catch of the day carpaccio and mussels with Pernod, chorizo, fennel and mint to start, Athenian lobster pasta, sautéed farmed totaba, and chicken tajine for the main event.
And seriously, it would be hard to imagine not finishing with the orange baba rum, especially as there is a top class gym with cardio and spin bikes on site to work it off.

Dalia joins not only Cielomar at the Viceroy, but also casual Mexican eatery Casero, the exceedingly sexy Otro Bar, and Japanese grill Nido, complete with beach and poolside bar. So one could reasonably plan a visit for the epicurean adventures alone. Still, we would strenuously recommend against checking out without having experienced the Tranquil Damiana Massage (employing ASMR techniques) at The Spa, as a way of effectively confronting the sizable stresses that have characterized everyday life these last couple of years or so.
Los Cabos, of course, remains a serious celeb magnet, regularly drawing the likes of Gwyneth Paltrow, Justin Timberlake, Selena Gomez, Beyoncé and Leo DiCaprio. So don’t be surprised if an evening at Dalia also comes with a side of star-spotting included in the price – you’ve earned it.
