Through pineapple-braised pork belly, silken tofu with uni, and big-eye tuna poke, Hawaii comes to the mainland thanks to Chef Chung Chow (an alum of Per Se). There’s an exceptional wine list (which boasts a lot of good deals on great bottles) from wine buyer and GM Jin Ahn, who met Chow while both worked for Thomas Keller. Totally casual, un-kitchy, clean looking Hawaiian joint. Not a lei in sight.
