A throw-back to Mexican street food, Rick Bayless's new 60-seat cafe focuses on tortas (Mexican sandwiches filled with juicy, braised pork) and caldos (made-to-order soups) with ingredients like shellfish and pork belly. The space is small and narrow with an open kitchen and a street window where you can order up sugary churros and flaky empanadas. With on-site "bean-to-bar" cocoa-making capabilities, you can be sure that even if Bayless is trying to evoke an air of casual with this new spot, the food will taste anything but.
