For whatever reason, sushi in Park City is like vanilla ice cream at a creamery—the standard by which everything else is judged. Parkites are fanatical about their fish, and with competition like Blind Dog and its ilk, they have every right to be. Which works out badly for Sushi Maru. Not that Maru isn’t solid, it’s just not out of this world. And it’s location isn’t where it might hope to be (movie theatre and sporting goods store? Bad mojo). Its inside can be summed up by the words “Chopstick Club.” Asian fusion fumbles if the fundamentals aren’t sound. If the sushi menu can’t stand alone, people go elsewhere. There’re lots of elsewheres in PC. Such is life.
