Boutique hotel purveyors Starhotels have graced Italy's fashion capital with a truly eco-chic option that doesn't sacrifice style. Their new E.c.h.o. hotel is replete with recycled design elements, massive solar panels, and water recovery systems. Light-filled rooms and suites even have eco-aware mattresses! Leafy surroundings give it the feel of an urban "retreat", but with lots of sleek, groovy furniture, while the menu at Orto restaurant draws heavily on organic produce.
