Centered in Vancouver’s first jailhouse and its former meatpacking district, Blood Alley, in a chic refurbishment of a darkly iconic 19th century space, Gastown’s visceral past makes a pulse-pounding dining experience today. Chef Lee Cooper is equally inspired by seafood, game, and all the succulent local proteins he sources, and afterwards, don’t miss his fey dessert take on bubble tea with berries, tapioca and earl grey granitas. Thoughtfully-curated wine and spirits list, with knockout original cocktails, like the Donald Draper and the Slaughterhouse, served in elegant antique glassware.
