Chef Gastón Acurio comes from Lima to expand NYC’s culinary horizons. Haute Peruvian cooking emphasizes bounty of the sea, as in the national dish that serves as namesake. Tamarind, sesame, corn, and yam among the accompaniments to hamachi, yellowfin, and octopi. Also skewers, scallops and quinoa, whipped potato “causas.” Sprawling space covers two floors, with stylized bead sculpture raining through upstairs aperture. Modernist look, with teal accents tying back to the sea.
