Former Brooklyn Heights bistro rises from its baguette ashes all-American as Wonder Bread and a tub of Country Crock. Geographical mishmash of haute comfort: Maine lobster rolls, Louisiana gumbo, Amish chicken. United by rib-sticking, chin-doubling. Dixie-pat dinner for two is fried chicken with better than Mama's fixings -- buttermilk mashed potatoes, celery root slaw, un-lumpy gravy. Mac 'n' cheese three ways, including an aged parmigiano riff gussied up with truffles and porcini mushrooms, which sounds a little bit terrorist to us.
