Black sleeveless shirt and a big tattoo on his right deltoid—yup, “Demon Chef” (that’s what his tattoo means in Chinese) Alvin Leung is the kind of cook Anthony Bourdain can get along with. Bo Innovation is not your average speakeasy—it’s by no means a secret underground eatery—but it capitalized on the private kitchen bubble that took over Hong Kong at the turn of the millennium. Leung and his jolly, shaggy crew go a-pirating through western and oriental cuisine, plundering what they want from dishes all around the globe, although his fusion creations don’t always turn out great. What’s important is the experience—you’re stuck in an intimate setting and what you’re given to eat is at the mercy of the captain, but by the end you’ll follow Leung off the plank.
