Storied cheese shop from Seattle opens a magisterial dairy temple north of Union Square. Three levels: dark basement-level bar, bustling main cafe floor, and mezzanine overlooking the cheese vats. Simple sammies and coffee to eat in, along with all the fine cheese wedges (or pâté) you can stand.
