Not to beat a dead seahorse, but raw fish in Park City equals good-money play. Park City Sushi Sensei Mikey Aguilar teams up with O’Shucks ninjas to take down other haughty Sushi dynasties. Low-key spectacular—easily swims with the big fish, but keeps things a minnow more demure. Daily special rolls that actually deserve the name, happy hour from 5-6. Locals actually come back, which speaks well of the notoriously relaxed (read: cool) staff and après-meal environment. Chefs that might drink with you, a wait-staff you’d want to, and sushi so good you’ll leave speaking in bad overdub.
